ConAgra Foods #BackyardBash w/ Chef Boyardee, Hunt’s & Egg Beaters!

Whenever I think of summer, I am immediately drawn to the thought of backyard barbecue parties, enjoying our New York beaches, and fun with my family and friends. Memorial Day weekend is the perfect holiday to kickoff your summer fun – even though the season won’t officially begin for about three more weeks.

Our family decided to invite a few of our closest friends over for a small Memorial Day Backyard Bash! We invited 7 guests to our home on Monday, which gave us a total of 10 attendees for our Memorial Day Bash! Warm weather means outdoor fun. Outdoor fun means mouth-watering barbecues, which translates into a weekend outdoor party whenever we have a chance to host our friends.

Whether we invite one of our favorite couples, or opt to go big with 20 or more of our buddies – I love these outdoor backyard barbecues. We always have a great time during one of our intimate gatherings with friends and family.  

ConAgra Foods taught our family and guests a lot about where our food comes from during our party. Whether we are cooking up some fresh veggies or everyday foods from our pantry like Hunt’s, Egg Beaters and Chef Boyardee, there’s a lot to know and even more you will be glad to find out!

We received a party pack from ConAgra foods, which contained a package of assorted herb and tomato seeds, time capsule lockbox, two Chef Boyardee aprons, Chef’s hat, and a great booklet filled with delicious recipes for dish ideas that would incorporate ingredients from Hunt’s, Chef Boyardee, and Egg Beaters. I loved all of the recipes that I found inside of our party pack and will definitely incorporate at least one of the dishes into our summertime backyard parties this year!

Prior to our party, I picked up several ingredients that we would need in order to feed and entertain our Memorial Day guests. We decided to create two dishes from the ConAgra recipe cards from the party pack. I also made a few copies of the booklet so that our guests could flip through and take a copy home to duplicate the recipes we created during our backyard bash. Want to know which recipes we served from the ConAgra Backyard Bash party pack?! 

Memphis-Style Mac and Cheese Sandwiches → Believe it or not, I had never even heard of Mac and Cheese sandwiches! I know – hard to believe. I thought this would be a great dish to serve our guests, which was a Memphis-Style sandwich as opposed to your basic mac and cheese sandwich. The recipe called for rotisserie chicen or cooked pork (shredded), barbecue sauce, sourdough bread, Chef Boyardee Mac & Cheese, and butter. Preparing this dish was very easy and took less than 30-minutes from start to finish!

Next up was a Zucchini, Black Bean and Rice Skillet. First of all, I was craving zucchini all week and this dish looked absolutely delicious! The dish also stated 30-minutes from start to finish, so I was able to prepare both dishes at the same time, which turned out to be a great timesaver and made things a lot easier when we were getting ready for guests to arrive.

We also placed all of our memories or a short message into the lockbox safe. We will come back in the future to see what we all left inside! Items included one of my sons toys, pictures, a memory card (can’t wait until I get to say "Wow! Remember these things?!?" and a few short words about what summertime, friends, and barbecue parties mean to each of us in 2012!

  1. I’m always looking for new vegetarian recipes to try, the black bean, rice, and zucchini skillet looks amazing!

    I wish I could figure out how to crave zucchini and not chocolate! 😛

  2. I had never heard of memphis style or any style mac and cheese sandwiches before either! They sure look and sound delicious and if my kids were still young I’d have to make them at least once for sure so they could try them as I know they would love them. I know “I” would love them too but that is a problem since I seriously NEED to eat low carb lol
